The Best Veggie Soup


As I mentioned, my little boy got a cold recently. When he first started showing symptoms I started thinking....CHICKEN VEGGIE SOUP! Everyone loves chicken soup when they feel icky and probably so would a baby.

But what a perfect way to also add a ton of veggies! So here is my ultimate veggie chicken soup. This recipe makes a lot of soup so be prepared to freeze some or serve the rest of your family some soup for dinner!

The Whole Garden Veggie Soup...and toss a chicken in too:

1 organic carrot peeled and chopped

2 organic celery sticks, chopped

1 cup organic peas

1 cup organic green beans

1 cup organic zucchini

1 cup organic broccoli

1/2 cup organic Lima beans

1/2 a large onion or 1 small onion, shopped

1 organic leek, cleaned and chopped

1 whole organic young chicken

4 cups Organic Homemade Chicken Broth (or store bought, please use low sodium though)

1 tablespoon organic heavy cream

In a large soup pot, pour in broth and add all veggies. Wash chicken and place in the pot. Cover pot and turn on the stove to a medium flame. Take lid off once soup starts to simmer. Cook until meat is falling off the bones. Turn off flame and take chicken out. Let the chicken cool and strip it of all it’s meat. Add meat back into pot. Ladle 2 cups worth of soup with chicken, veggies and broth into your blender. Puree until soup is smooth. Add cream and blend again. Serve warm.

If you plan to serve the remaining soup to your family, you can puree it for a smooth soup or leave it as is. However, please remember to season it. Add salt and pepper to taste. Do not add salt or pepper to the soup for your baby.
