This spaghetti sauce is wonderful for infants, children and adults who don’t eat enough veggies. It’s a delicious sauce and can be served on anything from pasta to chicken. You could even add ground meat/poultry to it and turn it into a bolognese.
Entire Vegetable Garden Pasta Sauce:
1 garlic clove
1 small onion
3 tablespoons extra virgin olive oil
! cup Broccoli
1/2 cup Cauliflower
1/2 cup green beans
1/2- 1 cup zucchini
1/2 cup celery
1/2 cup carrots
1/4 cup peas
1/4 cup spinach
1 can organic stewed whole tomatoes (you can use fresh tomatoes, if so you will need at least 4 large tomatoes)
2 cups+ homemade chicken or vegetable broth
1/2 cup parmegiano reggiano cheese
3-5 fresh basil leaves
1 teaspoon fresh oregano
salt and pepper
In a large sauce pan add the olive oil and turn on heat to medium-high. Chop up your onion and throw it into the sauce pan. Once onions are soft, remove the peel from the garlic clove, squash it with the flat side of a knife and through it in. Add your can of tomatoes and all of your veggies. Pour in 2 cups of your chicken broth and add your fresh oregano. Cover and reduce the heat to low. Let this beautiful mixture cook for about an hour. Stir every so often.
Once the sauce is done cooking, remove the lid and let it cook until the liquid has reduced to barely covering the veggies. Turn off the heat and let it cool. Remove the garlic clove, chop up your basil leaves and throw them in. Toss in cheese and stir to incorporate the basil. Add salt and pepper to taste. However, if this is for an infant, do not add pepper.
Let your sauce cool completely then transfer in batches to your blender and puree the sauce. You can freeze portions of it if you want, it thaws beautifully.
To prepare the sauce for serving. Reheat the sauce in a small sauce pan, add protein (chicken, ground beef or turkey) if you want. Cook your pasta as directed on the package. Leave some of the pasta water and ladle your hot sauce in with the cooked pasta. Turn heat under pasta on to low heat and stir the sauce and pasta for about 2-3 minutes. This will allow the pasta to absorb some of the sauce. Serve pasta with some fresh basil and a bit more cheese.
