Smooth Celery Root Puree


Oh what a fabulous discovery this was. I was strolling along the veggie section of Whole Foods pondering what else to introduce to my baby. As I walked by the Rutabagas I saw a basket full of organic celery roots. The lightbulb went off in my head and I bought one.

This puree is fabulous with all sorts of proteins or other veggies. Try it by itself or with some ground up steak, pork, chicken, fish or turkey.

Smooth Celery Root Puree:

1 celery root bulb (peeled and cut into cubes)

1 tablespoon unsalted butter (melted or at room temp)

1/4- 1/2 cup organic whole milk

pinch of nutmeg

Place celery root in steamer and steam for about 15-20 minutes. Remove from steamer and place cubes in your blender alone with the steaming water. Puree until smooth. Add butter and some of the milk (or all if the puree is a bit lumpy and dry). Puree until smooth as velvet. Add nutmeg and blitz one more time.

Serve warm with my Entire Vegetable Garden Pasta Sauce and maybe some sauteed ground organic turkey. Your little one will love it!
