Cauliflower Gratin


This is a wonderful recipe for any mom battling a little one who refuses to eat veggies. You can substitute the cauliflower for parsnips, rutabaga, zucchini or any other veggie

Cauliflower Gratin:

1 medium cauliflower, cleaned and florets cut off

1 cups shredded cheese, I recommend emmental cheese or comte cheese, but anything will do, even mozzarella

a pinch of freshly zested nutmeg

2 tblsp unsalted butter

3 tblsp flour

1 1/3 whole milk

1-2 tblsp breadcrumbs

Turn oven to 350 degrees

First cook/steam cauliflower

Place Florets in a saucepan with boiling water and cook until tender or place in your steamer until tender

Make the sauce:

In a saucepan melt butter until it starts to bubble. Add flour and stir for 2-3 minutes until it becomes a ball and cooks the flour. Do not brown. Add milk slowly stirring with a small whisk to make sure all the lumps are dissolved. Cook until sauce starts to simmer. Then turn heat off and add 1/2 cup of cheese and nutmeg and stir.

Place cauliflower in an oven safe dish. Poor sauce over the cauliflower making sure the florets are covered. Sprinkle remaining cheese and then breadcrumbs. Place in oven and bake for about 15-20 minutes. Turn broiler on and place dish under the broiler for about 3 minutes to get the top nice and crispy.

Serve warm
