Cauliflower Hummus


I made this hummus because I was a bit tired of regular hummus. My child simply adored this recipe and what a great way to get him to eat more cauliflower!

1 head cauliflower, roughly chopped

2 Tbsp olive oil

½ tsp salt

¼ tsp pepper

2 cloves garlic (roasted)

⅓ cup tahini

¼ cup lemon juice

¾ cup olive oil

1.5 tsp sea salt

½ tsp smoked paprika + more for garnish

¼ cup water

DIRECTIONS

Preheat oven to 375.

Rub cauliflower with the oil and sprinkle with salt and pepper.

Spread over a baking sheet and roast for 40 min or until cauliflower is mildly browned.

Add cooked cauliflower and remaining ingredients in a blender and blend until smooth.

Taste and add extra seasonings or water until desires taste and texture.

Serve cold top with a chimichurri sauce.

Chimichurri:

1 cup fresh Italian parsley leaves, lightly packed

¾ cup olive oil

3 tablespoons lemon juice

2 tablespoons red wine vinegar

3 cloves garlic, peeled1 teaspoon dried oregano

1 teaspoon sea salt

½ teaspoon chipotle chili flakes (optional)

¼ teaspoon fresh ground pepper

Put all ingredients in blender and blend
