INGREDIENTS
Waffle Ice Cream Sandwiches
16 of your favorite waffles (plain, chocolate, blueberry or a combination of a
few different ones)
OR, Homemade waffles, fresh or thawed.
Soft Chewy Chocolate Cookies
1/2 cup of unsalted butter at room temperature
1 cup sugar
1 large egg
1 teaspoon vanilla
5 tbsp cocoa powder
Pinch of salt
1 1/2 cups flour
1 tsp baking powder
8 scoops of ice cream
Add Ons: Sprinkles, mini chocolate chips, mini m&ms…etc
DIRECTIONS
1. Cookies:
a. Preheat oven to 350. Line two baking sheets with parchment paper or silpats.
b. In a bowl whisk butter and sugar until smooth and pale. Add egg and vanilla, whisk more careful not to over do it.
c. In a small bowl mix flour, cocoa powder, baking powder and salt.
d. Slowly add the dry ingredients into the wet ingredients until a dough forms.
e. Roll out 16 dough balls. Place them on the cookie sheets so they are evenly spread out. Gently press each ball into a 3 inch disc.
f. Bake for 20 minutes. Remove from oven and let them cool completely.
g. Once cooled, scoop one scoop of ice cream on 8 of the cookies. Using the extra unused cookies, press the ice cream scoop to create sandwiches.
h. Roll the sandwiches in any of your add ons. Freeze sandwiches first on a cookie sheet then once frozen, transfer to a freezer ziplock bag.
Waffle Sandwiches:
a. Take two thawed or fresh waffles.
b. Add a scoop of ice cream to a waffle.
c. Using an extra unused waffle, gently press down on the ice cream scoop to create a sandwich.
d. Press each side of the sandwiches into an add on
e. Freeze the sandwiches on a cookie sheet first, then transfer into a freezer ziplock bag.
